Roasted pomodoro  sauce is a delicious and versatile sauce that can be used  in a variety of dishes. It's easy to make and has a rich, savory flavor  that pairs well with pasta, vegetables, and meats. Here's a recipe for a flavorful and authentic roasted pomodoro sauce:

Roma Tomatoes

Ingredients
  • 3 pounds of ripe, high-quality tomatoes
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1/4 cup olive oil, divided
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons brown sugar (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2-4 fresh basil leaves, torn
Instructions
  1. Preheat your oven to 400°F (200°C).

  2. Wash and dry the tomatoes, then cut them in half.

  3. Arrange the tomato half's on a baking sheet lined with parchment paper, skin side down.

  4. Drizzle the tomatoes with 2 tablespoons of olive oil and season with salt and pepper to taste.

  5. Roast the tomatoes in the oven for 35-40 minutes, until they are soft and slightly charred.

  6. When the tomatoes are finished roasting, heat 2 tablespoons of olive oil in a large saucepan over medium heat.

  7. Add the diced onion to the saucepan and cook for 5-7 minutes, until the onion is soft and translucent.

  8. Add the minced garlic to the saucepan and cook for another 1-2 minutes, until fragrant. Do allow the garlic to brown.

  9. Add the roasted tomatoes, including any juices that have accumulated on the baking sheet, to the saucepan with the onion and garlic.

  10. Stir in the balsamic vinegar, brown sugar, salt and pepper.

  11. Bring the sauce to a simmer and cook over low heat for 20-25 minutes, stirring occasionally, breaking apart the tomatoes with a wooden spoon until the sauce has thickened slightly.

  12. Remove the saucepan from the heat, add the basil, and let the sauce cool slightly.

  13. Use an immersion blender or a regular blender to puree the sauce until it is smooth. Taste and add more salt to taste, if necessary.

  14. Serve the sauce over pasta, vegetables, or meat.
