Spicy Chicken Quesadilla
Ingredients
- 1 rotisserie chicken breast, shredded (about 16 oz)
- 4 large lour tortillas
- ½ cup pre-made guajillo sauce
- 2 cups shredded Queso de Oaxaca or Monterey Jack cheese
- ¼ cup chopped fresh cilantro
- Mexican crema
- Fresh lime wedges
Instructions
In a large mixing bowl, combine the shredded rotisserie chicken breast and the guajillo sauce. (If using guajillo paste, thin with some chicken broth or water to a pour-able consistency). Mix well until the chicken is fully coated. Reserve about 1/4 cup of the sauce for later.
Preheat a large skillet over medium-high heat. Spread a thin layer of the reserved sauce on the outside of each tortilla. Lay a tortilla in the skillet, sauce side down, and add a generous amount of the chicken mixture on top. Sprinkle shredded cheese on top.
Fold the tortilla in half and press down gently with a spatula. Cook for a few minutes on each side, until the cheese is melted and the tortilla is crispy and golden brown. Remove from heat and let cool for a minute or two before slicing into wedges.
Serve the quesadillas with a drizzle of Mexican crema, some fresh cilantro, and avocado on the side.
