Ingredients
  • 1 rotisserie chicken breast, shredded (about 16 oz)
  • 4 large lour tortillas
  • ½ cup pre-made guajillo sauce
  • 2 cups shredded Queso de Oaxaca or Monterey Jack cheese
  • ¼ cup chopped fresh cilantro
  • Mexican crema
  • Fresh lime wedges
Instructions
  1. In a large mixing bowl, combine the shredded rotisserie chicken breast and the guajillo sauce. (If using guajillo paste, thin with some chicken broth or water to a pour-able consistency). Mix well until the chicken is fully coated. Reserve about 1/4 cup of the sauce for later.

  2. Preheat a large skillet over medium-high heat. Spread a thin layer of the reserved sauce on the outside of each tortilla. Lay a tortilla in the skillet, sauce side down, and add a generous amount of the chicken mixture on top. Sprinkle shredded cheese on top.

  3. Fold the tortilla in half and press down gently with a spatula. Cook for a few minutes on each side, until the cheese is melted and the tortilla is crispy and golden brown. Remove from heat and let cool for a minute or two before slicing into wedges.

  4. Serve the quesadillas with a drizzle of Mexican crema, some fresh cilantro, and avocado on the side.
