Recipe: Chipotle BBQ Sauce

Ingredients:
  • ½ small onion, peeled (50 g)
  • 4 garlic cloves, outer skin on (10 g)
  • 2 tablespoons olive oil
  • 8 ounces of tomato sauce
  • 2 chipotles in adobo*
  • 2 tablespoons tomato paste
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon light brown sugar
  • ½ tablespoon fresh black pepper
  • ½ teaspoon Kosher salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon dry mustard

*TIP: 

2 chipotles and 1-2 teaspoons of the sauce they are in, creates a BBQ sauce with medium heat. Use 1 chipotle for a milder sauce, or increase to 3 or 4 chipotles for a spicer sauce.

Instructions:

  1. Pre-heat oven to 400ºF

  2. Place onion and garlic cloves in an oven-proof dish, and drizzle with 2 tablespoons of olive oil, making sure everything is coated. Roast in the oven for 30-40 minutes, until the onion is slightly charred and the garlic cloves soft.

  3. Remove the outer skins from the garlic cloves. Rough chop the onion, removing root end. Place the peeled garlic, chopped onion and any pan juices, into a blender jar.

  4. Add the remaining ingredients to the blender jar and purée until smooth. Alternately, you could purée with an immersion blender, after placing all ingredients into a suitable container.

  5. Transfer puréed chipotle sauce to a suitable sauce pan, and bring to a low-simmer. Taste the sauce and adjust seasonings to your liking if necessary. Simmer for 15 minutes to allow flavors to develop.

  6. Cool the sauce to room-temperature and store in the refrigerator for up to one-week. This recipe as written, makes about 12 ounces of sauce.
