Ingredients:
- 8 large eggs
- ¼ cup milk or cream
- Kosher Salt and pepper to taste (start with ½ teaspoon salt and pepper)
- 2 tablespoons olive oil
- ½ pound sweet Italian sausage, casing removed
- 1 cup thinly sliced onion
- 1 cup mushrooms, sliced
- ½ cup red peppers, julienned
- 2 cups fresh spinach, chopped
- 1 cup shredded cheese (cheddar, fontina or mozzarella)
Instructions:
Place oven rack in center of oven and preheat oven to 375°F (190°C).
In a bowl, whisk together eggs, milk or cream, salt, and pepper. Set aside.
Heat olive oil in an oven-safe skillet over medium heat. Add sausage and cook until browned. Remove excess fat if needed.
