Total Time: 40 minutes

Ingredients:

  • 1 cup long-grain rice, rinsed well and drained
  • 1-2 tablespoons avocado or vegetable oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1¼ cup low-sodium chicken stock
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Unleashing Fluffiness — Rinsing Rice: Rinsing the rice is essential to eliminate surface starch, enabling the grains to cook up light and fluffy.

  2. Sauté the Aromatics: In a large skillet, heat the avocado or vegetable oil. Add finely chopped onions, sauté until golden brown and aromatic.

  3. Toast the Rice: Stir in the rice, letting it toast it to a golden hue, giving your Arroz Mexicano that irresistible nutty flavor. It's the essential technique for an authentic touch! Add the garlic and cook until fragrant. Do not burn the garlic.

  4. Tomato Fusion: Add the tomato paste to the skillet, infusing the rice with a rich, tomatoey flavor. Let it simmer together until the flavors.

  5. Stock Infusion: Pour in the chicken stock. Add cumin, chili powder, and a dash of salt. Stir it all in, and bring everything to a lively boil.

  6. Simmer to Perfection: Lower the heat, cover the pot, and let the rice simmer for approximately 18-20 minutes or until the rice is tender and has absorbed the stock. Remove from the heat and let the rice steam for 10 minutes, covered.

  7. Fluff and Garnish: Uncover, fluff the rice with a fork, and garnish with fresh cilantro.
