Roasted Red Pepper Pesto

Ingredients
  • 2 large red bell peppers
  • 1/2 cup packed fresh basil leaves

  • Sea salt and pepper to taste


Instructions
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. Cut the red bell peppers in half and remove the seeds and stems. Place them cut-side down on the prepared baking sheet.

  3. Roast the peppers in the preheated oven for about 25-30 minutes or until the skins are charred and blistered.

  4. Remove the peppers from the oven and transfer them to a bowl. Cover the bowl with plastic wrap or place them in a resealable bag to steam for about 10 minutes. This will make it easier to remove the skins.

  5. After steaming, peel off the charred skins from the peppers. They should come off easily. Discard the skins.

  6. In a food processor or blender, combine the roasted red peppers, basil leaves, Parmesan cheese, almonds, and minced garlic. Pulse until the ingredients are roughly chopped.

  7. With the motor running, slowly drizzle in the olive oil until the mixture is well combined and has a pesto-like consistency.

  8. Taste and season with sea salt and pepper as desired.

  9. Transfer the roasted red pepper pesto to a jar or airtight container and refrigerate until ready to use.


NOTE: If desired use a large jar of store-bought roasted red peppers.
