Orange Mirin Glazed Salmon over Greens 

A Perfect Balance of Tangy Citrus and Savory Fish

Salmon is a delicious and healthy fish that's rich in omega-3 fatty acids, protein, and essential vitamins and minerals. This recipe combines the bold flavors of soy sauce, Mandarin orange juice, and mirin to create a glaze that's perfect for pan-seared or grilled salmon. The glaze is super-easy to make and adds a sweet and savory kick to the salmon, making it a perfect dish for a quick weeknight dinner or a fancy dinner party.



Salmon with Marinade-Glaze

Ingredients

  • 4 salmon fillets (skin on or off)
  • Sea Salt and fresh-cracked pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup mirin
  • 1/4 cup fresh Mandarin orange juice
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Optional: Mandarin orange segments, thin-sliced green onions and toasted sesame seeds for garnish

Instructions
  1. In a small bowl, whisk together the soy sauce, mirin, orange juice, honey, minced garlic, and grated ginger to make the glaze. Set aside.

  2. Pat the salmon fillets dry with a paper towel and season both sides with salt and pepper.

  3. Heat the olive oil in a large non-stick skillet or grill pan over medium-high heat. Once hot, add the salmon fillets to the skillet, skin side down if using skin-on fillets.

  4. Cook the salmon for 3-4 minutes on one side until golden brown, then flip and cook for an additional 3-4 minutes on the other side until the salmon is cooked through but still moist and tender.

  5. While the salmon is cooking, pour the glaze into a small saucepan and heat over medium heat until it comes to a simmer.

  6. In a small bowl, whisk together the cornstarch and water to make a slurry. Once the glaze is simmering, whisk in the cornstarch slurry until the glaze thickens slightly.

  7. Once the salmon is cooked, remove it from the skillet and transfer it to a serving platter. Drizzle the orange-soy-mirin glaze over the salmon fillets.

  8. Optional: garnish with sliced green onions and toasted sesame seeds before serving.
