Welcome to The Small Town Chef. Today, we're making a classic American favorite – homemade Buttermilk Chicken Tenders. There's just something magical about that perfect crunch and juicy goodness—no fuss, no frills, just good old-fashioned comfort food. So, grab your apron and let's whip up a batch of these crispy delights that are bound to transport you right back to childhood.

Ingredients:

  • 1.5 lbs chicken tenders
  • 2 cups buttermilk
  • 1½ cups all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional, for that spicy kick)
  • Oil for frying

Instructions:

  1. Place chicken tenders in a bowl, cover with buttermilk, and let them soak in the fridge for at least 2 hours.

  2. In a separate bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add 2-3 tablespoons buttermilk, stir everything together until clumpy.

  3. Take each marinated chicken tender, shake off excess buttermilk, and coat in the seasoned flour mixture, press the chicken firmly into the flour mixture so it sticks to the chicken.

  4. In a skillet, heat about 1-inch of  oil over medium-high heat until it's ready for frying (350ºF).

  5. Carefully place 4-6 coated tenders in the hot oil, cooking 3-4 minutes per side until golden brown. Do not crowd chicken in the pan.

  6. Transfer cooked tenders to a paper towel-lined plate to absorb excess oil. Serve and enjoy with your favorite dipping sauce.
