  • 4 Mahi Mahi fillets
  • 8 slices of prosciutto
  • 8 fresh sage leaves
  • 1 cup all-purpose flour
  • Kosher salt and fresh black pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup dry white wine
  • 1/2 cup unsalted chicken stock
  • 2 tablespoons cold unsalted butter
  • Fresh parsley for garnish
 

Instructions

1. Prepare Mahi Mahi Fillets

  • Pat the Mahi Mahi fillets dry with paper towels.
  • Season both sides with salt and black pepper.

2. Wrap with Prosciutto and Sage

  • Place 2 sage leaves on each Mahi Mahi fillet.
  • Wrap each fillet with 2 slices of prosciutto, securing the sage leaves in place.

3. Coat with Flour

  • Lightly coat each fillet in flour, shaking off the excess.

4. Cook Mahi Mahi

  • Heat olive oil in a large skillet over medium-high heat.
  • Add Mahi Mahi fillets and cook for 3-4 minutes per side or until prosciutto is crispy and fish is cooked through.
  • Transfer fillets to a plate and tent with foil to keep warm.

5. Prepare Pan Sauce

  • Deglaze the skillet with white wine, scraping up any browned bits.
  • Add chicken stock and simmer for 5 minutes.
  • Whisk in cold butter until sauce is smooth and glossy.
  • Adjust seasoning as necessary to taste.

6. Serve

  • Pour the pan sauce over the Mahi Mahi fillets.
