Savory Plum Sauce
Turn Ordinary into Extraordinary
Recipe: Savory Plum Sauce with Herbs
Ingredients:
- 2 cups red plums, pitted and chopped
- 1 cup black plums, pitted and chopped
- 1 cup Sauvignon blanc
- 1 cup Merlot
- 1/2 cup shallots, finely chopped
- 1 tablespoon fresh thyme leaves
- 1 sprig fresh rosemary
- 1 bay leaf
- 2 star anise
- 1 cinnamon stick
Prepare Plums: Wash, pit, and chop both red and black plums.
Sauté Shallots: In a saucepan, sauté finely chopped shallots until they become translucent.
Add Pums: Add the chopped red and black plums to the saucepan. Stir and cook for a few minutes until the plums begin to soften.
Wine Infusion: Pour in the Sauvignon blan and Merlot. Allow the mixture to simmer and let the alcohol cook off, leaving behind the rich flavors of the wine.
Herbs and Spices: Add the fresh thyme leaves, rosemary sprig, bay leaf, star anise, and the cinnamon stick to the saucepan. Stir well to combine.
Simmer: Let the sauce simmer on low heat for about 30-40 minutes, or until the plums are completely soft and the sauce has thickened.
Remove Spices: Remove the bay leaf, star anise, cinnamon stick, and rosemary sprig from the sauce. Discard them.
Blend (Optional): For a smoother consistency, you can use an immersion blender to puree the sauce. Adjust the thickness by blending to your desired texture. For an ultra-smooth sauce (or coulis), push the sauce through a fine mesh strainer.
Adjust Seasoning: Taste the sauce and adjust the seasoning if needed. You can add a pinch of salt or a drizzle of honey if desired.
Cool and Store: Allow the sauce to cool completely before transferring it to a jar or airtight container. Store in the refrigerator.
Serve: This gourmet savory plum sauce with herbs pairs well with grilled meats, roasted vegetables, or as a dipping sauce for appetizers.
